Heirloom Cucumbers come in all shapes and sizes. There are round yellow cucumbers like the popular Lemon Cucumber and white cucumber such as Miniature White Cucumber which are great for adding to salad. Pickling varieties of cucumbers are usually earlier maturing than the larger growing slicing cucumbers. Mideast types of cucumbers such as Beit Alpha are midsized and have smooth green skin.
