Heirloom Celery has a wide variety of uses. There are leaf forms such as Soup Celery that form a leafy mound of leaves that are great for salad or soups and stews. Red Stalk Celery has a robust flavor and is great is soup. Celery that forms large stalks need a lot of moisture but the leaf varieties do not need as much moisture and are easy to grow.
