A traditional Amaranth grown by the Hopi Indians and used as a ceremonial food dye to make red cornmeal. The seed can be ground into a protein rich flour and the young leaves and cotyledons are very dark red adding a lot of color and flavor to salads. The reddish flower plumes make it a showy ornamental as well.
