Bush beans are best used in there dry state for baking, chili or soup but many varieties, such as Carr, Drew’s Dandy’s, John’s and Red Valentine can be used as a snap bean when young. Some varieties can also be used as a “shelly” bean or shell bean which means that while the pod is still fresh, but the seed has formed inside, they can be shelled and the fresh seed cooked. Chevrier Verte and Orca Bean are great used as a Shelly Bean.
